Bò Lúc Lắc

Shaking Beef

This is a favorite among most Vietnamese foodies. The marinated onions offer the perfect pickling counterpart. This dish is a great, easy weeknight meal. “Bò” means beef or steak, and “lúc lắc” means “to shake” in Vietnamese, which refers to how the steak is shaken in the pan or wok during the cooking process. Bò lúc lắc is best served with rice, green leaf lettuce leaves, cucumber slices, tomato slices, and marinated onions.

Ingredients:                                       Directions:

    • 1 1/2-2 lbs flank steak
    • 5 cloves garlic, peeled and minced
    • 3 tbsp oyster sauce
    • 3 tsp soy sauce
    • 1 1/2 tsp fish sauce
    • 3 tsp Maggi seasoning sauce
    • 1 1/2 tbsp palm sugar (or brown sugar if you need to substitute)
    • 3 tbsp butter
    • 1 tbsp canola or vegetable oil

    Marinated Onions:

    • 1 small-medium yellow onion, sliced

    into halfmoons

    • 3 tbsp rice vinegar

    • 3 tsp sugar

    • 1 1/2 tsp black pepper

    • 1 tsp salt

1. Cut the flank steak into bite-sized cubes and place in a large bowl.
2. In a separate bowl, mix garlic, oyster sauce, soy sauce, fish sauce, Maggi, and palm
sugar. Mix until well combined.
3. Pour the marinade mixture over the steak cubes and make sure all the steak is
coated. Set aside and let it marinate for 15-30 minutes.
4. Marinate the onions: in a small bowl, combine the rice vinegar, sugar, pepper, and
salt. Mix until sugar and salt are dissolved. Add the sliced onions and combine. Set
aside and let the onions marinate until ready to serve.
5. Heat a large skillet/pan to medium high and put a dash of oil in to lightly coat the
bottom.
6. When you can see the oil start to smoke, put all the beef and marinate into the pan
and spread around so all the beef is one layer. Do not touch for about 3-5 minutes.
7. After the beef has cooked untouched for 3-5 minutes, add the butter. Stir around
the beef and shake the pan so that all sides of the beef are cooked, about another
2-3 minutes and until the butter has melted. The steak should be tender and the
cooking temperature should be medium-rare to medium.
8. Turn off heat and serve with rice, marinated onions, and vegetables. Enjoy!
