Lemongrass Pork Ribs

Pork ribs are easy to prepare and cook. Just be sure to marinate the night before, so the meat has time to soak in the flavor. You can even marinate and freeze ribs for later use. When you’re ready to eat, just toss them into the oven or air-fryer (or oven) and that’s it! Enjoy with steamed white rice and vegetables. You can even pick it up and enjoy it right off the bone without the rice & vegetables, which is how we liked eating it as kids.

Ingredients:                                      Directions:

  • 2 lbs pork ribs, separated individually
  • 2 medium shallots, chopped
  • 1-2 tbsp frozen grated lemongrass
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp Shaoxing cooking wine
  • 1 tbsp chili garlic sauce
  •  1 tsp salt
  • 1 tsp Vietnamese five spice powder
  • 1 tbsp minced garlic
  • 4 scallions, chopped
  • Cilantro for garnish

1. Wash and dry ribs and put them into a large bowl.
2. Put all other ingredients into a medium sized bowl and mix. Pour onto pork
and mix until meat is evenly coated.
3. Put into a gallon sized Ziploc bag (with sauce) and marinate in the refrigerator
for a minimum of 2 hours, overnight for best results.
4. Preheat the oven to 400 degrees.
5. Place ribs onto a pan and cover with tin foil. Bake at 400 degrees for 35 minutes.
At 35 minutes, remove tin foil and continue to bake for another 10 minutes.
Flip using tongs. When ribs are cooked, turn on low broil for 5 minutes to get
the ribs nice and brown. Watch the meat because all ovens are different.
6. To cook in the air fryer, at 380 degrees, cook for 30 minutes. Flip using tongs.
Cook for another 10 minutes. Always monitor when you’re using the oven so
your meat doesn’t burn.
7. Serve with rice & your choice of vegetables.
